Hello Everyone and welcome to recipe post #3, Aubergine Delight! Today I am sharing a meal I made for myself when I was on a no carb diet. Which I succeeded doing so for 8 days! This is one of the meals I enjoyed. If you want to see the previous recipe posts, you can: Post #1 and Post #2.
I love aubergines, and they go so well with tomatoes and pesto sauce, however I couldn’t eat pesto on my diet so it is not in this dish. But I got my inspiration from a dish I made with my sister a while ago which was cos-cous- chopped and cooked aubergine and pesto. It was lovely, and seeing that I couldn’t eat cos-cous or pesto I whipped this up!
This recipe is for how I made the auberinge:
1 Whole aubergine
Oil of choice
Sweet cherry tomatoes
1. I chopped the aubergines and brushed them with oil, chopped up cherry tomatoes, two per aubergine.
2. place the oiled aubergine onto the roasting tray and put a small dollop of pesto, add the chopped cherry tomatoes and place in the oven for 15-20 minutes.
3. serve with cous-cous, a little basil on top of the cooked auberinge, and some creme fraiche if you want.
